Paleoista's Flash Fried Sprouts with Chili

This delicious preparation will be sure to convert even the biggest sprout hater! Enjoy it hot out of the pan or save it for dessert once it's cooled down!
Ingredients
- 1 pound baby Brussels Sprouts
- 2 tablespoons rendered duck fat (or more)
- 2 cloves garlic, smashed
- 1 ounce raw, sprouted walnuts
- Red Chili Pepper Flakes, to taste
- Cilantro, for garnish
Instructions
- Using a paring knife, cut a cross mark in the bottom of each sprout
- Bring a pot of water to boil
- Set steamer basket atop pot and let cook 3 - 4 minutes
- Remove from heat and shock in ice bath
- Heat duck fat in skillet over medium high
- Add garlic and saute one minute
- Add sprouts and cook until crispy on the outside, adding more fat if needed
- Remove from heat
- Add walnuts and chili flakes, to taste
- Serve on platter with fresh cilantro as a garnish on top
