Paleoista's Ironman Duck-Fat Roasted Potatoes

Whether you've got a long bike ride and brick run tomorrow, or are hitting the pool before a trail run, fill your boots (and your legs!) with this delicious potato recipe, perfect for that strategic carbohydrate addition to the normal protein, fat + veggies!
Ingredients
- 3 pounds baby yellow potatoes
- 2 T kosher salt
- 1 tsp baking soda
- 4 tablespoons rendered duck fat (coconut oil can be used if a vegan version is preferred)
- 1 sprigs fresh rosemary
Instructions
- Preheat oven to 450, with baking tray inside
- Wash and halve potatoes
- Bring a large pot of water to boil
- Add salt and baking soda
- Add potato and allow water to return to boiling
- Drain pot of most of the water
- Add all but one tablespoon fat, stirring with rubber spatula to combine
- Place potatoes evenly on baking sheet
- Cook 20-30 minutes, flipping once halfway to ensure even browning
- Remove from oven, toss in bowl with remaining spoon of duck fat
- Sprinkle on rosemary and serve
