Poached Lobster Tails on Rapini

Daunted by the idea of cooking lobster? No need. In less than ten minutes you can prepare this delectable paleo protein source.
Ingredients
- 2 4-6 ounce lobster tails
- 2 tablespoons coconut oil
- 4 cloves garlic, minced
- 1 bunch rapini (broccoli raab), coarsely chopped
Instructions
- Heat a pot with two inches of water until simmering
- Heat oil in cast iron skillet over medium high
- Place lobster tails in simmering water; set timer for six minutes
- Add garlic to oil; cook one minute, then add raab
- Cover skillet with raab and stir occasionally
- When timer rings, turn heat off both burners
- Divide raab in half and plate
- Add one lobster tail to each plate
