Roast Turkey Breast

This is a weekly staple in my Paleo kitchen. A two to three pound bone-in, skin-on free range turkey breast lends itself to several breakfasts, lunches, dinners and meals between and is extremely versatile!
Ingredients
- 3-pound free range turkey breast, skin on, bone in
- 4 sprigs fresh rosemary
- ½ lemon, thinly sliced and pitted
- 2 tablespoons coconut oil
- Freshly ground black pepper, to taste
Instructions
- Preheat the oven to broil
- Loosen the skin from the turkey breast and pat dry with paper towels
- Stuff the rosemary sprigs and lemon slices under the skin and pull skin back over
- Rub coconut oil all over the skin
- Season with pepper
- Broil, skin side up, in glass or ceramic dish for 10 - 15 minutes, until browned
- Change oven to bake at 450
- Bake roughly one hour and fifteen minutes longer, turning over halfway
- Check to make sure internal temperature reaches 150F
- Remove from oven and tent with foil; let sit 15 minutes
- Check that temperature has reached 160F
- Serve with your favorite veggies while hot, then use leftovers the next two days for any of your Paleo meals!
