Making a Paleo friendly salad dressing is about the easiest thing one can make, and in less than five minutes. No need to feel your salad is dull- jazz it up with some seasonal love; vary the recipe for different seasons, based on what you find near you. Increase the recipe to make a larger batch for more people, keeping the oil to acid ratio at 3:1.
Ingredients
- 3 tablespoons extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- Freshly ground black pepper, to taste
- ½ small peach, peeled
- ¼ cup fresh basil leaves, plus two leaves reserved
- ¼ teaspoon dried ginger
- ¼ teaspoon dried turmeric
Instructions
- Combine all ingredients except reserved basil in mini prep food processor
- Whiz to combine
- Pour into glass or ceramic bowl and cover tightly with plastic wrap
- Chill for at least an hour before serving
- Use on fresh salads, as a dip for crudites, or as a sauce for a chilled summer salad
- Use reserved basil leaves for garnish
