Sauteed Baby Squash

Summer produce strikes again! The 'baby' varieties of many veggies are sweeter and more delicate, so give this farmer's market special a try.
Ingredients
- 2 pints baby squash (flowers optional)
- 1 pint baby shiitake mushrooms
- 2 tablespoons coconut oil
- 2 cloves garlic, smashed
- 2 tablespoons freshly chopped basil
- Freshly ground pepper, to taste
Instructions
- Thoroughly wash squash and mushrooms
- Heat oil in cast iron skillet over medium
- Add garlic and saute 1 - 2 minutes or until nicely browned
- Add squash and mushrooms and saute 5 - 7 minutes longer
- Add basil
- Turn off heat
- Cover pan and let sit a few minutes
- Grind pepper on top, to taste
- Serve with your favorite protein to make a balanced Paleo meal
