Sauteed Garlic Chard- Stems and All

No need to discard the stalky bits of Swiss Chard; when in season, they impart a surprisingly sweet note to this garlicky favorite.
Ingredients
- 2 bunches organic Swiss Chard- red or rainbow
- 2 tablespoons coconut oil
- 4 cloves fresh garlic, smashed
- 1 cup cherry tomatoes
Instructions
- Wash chard, then remove stems.
- Chop stems; shred leaves.
- Heat oil in skillet over medium.
- Add garlic and stems and cook, stirring, until softened; roughly five minutes.
- Turn off heat.
- Add tomatoes and chard leaves.
- Cover and let sit five minutes (just enough time to sear some wild fish or grass fed fillet).
- Serve with your favorite protein.
