Sauteed Greens, Leeks and Garlic

ANY leafy green tastes fabulous this way; vary it often to give your body a nice balance of all of them!
Ingredients
- 1 bunch collard greens
- 1 bunch Dino Kale
- 2 tablespoons coconut oil
- 1 leek, root and green portion removed, halved, washed and chopped
- 4 cloves garlic (or more!) very thinly sliced
Instructions
- Remove stems from greens
- Chop stems, set aside
- Place leaves in sink, fill with warm water and massage while tearing into bits
- Spin dry
- Heat oil in cast iron skillet over medium
- Add chopped leeks and stems and saute 5 - 8 minutes
- Add garlic and cook 1 minute longer
- Add shredded leaves, stir, cover and turn off heat
- Let sit for 3 - 5 minutes, stirring once or twice
- Serve with your favorite protein
