Seared Ahi on Summer Veg

Skip the bed of rice in favor of a bed of veggies. Let the seared Ahi take the center stage it deserves with its fresh flavor and meaty texture.
Ingredients
- 1 pound wild ahi, sashimi grade
- Salt free Cajun blackening spice, to taste
- 2 tablespoons coconut oil
- 1 large yellow squash, cut into circled slices
- 1 bunch rapini, chopped
- ½ cup melon (cantaloupe or honeydew) made into ball shapes
- 1 radish, sliced thin
- Freshly ground black pepper, to taste
Instructions
- Pat fish dry with paper towels
- Season with blackening spice
- Heat oil in cast iron skillet over medium
- Add squash and rapini and saute five to eight minutes until soft
- Remove from skillet and place on two plates
- Add ahi and sear briefly on each side, depending on how rare you want it
- Place half the ahi on each plate
- Garnish with melon and radish
- Sprinkle with pepper, to taste
