Steak, Greens & Berries for Breakfast

Breakfast is often the most challenging meal for people to paleoize, once grains are no longer part of the picture. Food is food, any time of day- and once we top thinking of 'breakfast' food, a whole new world opens up! You've heard of steak and eggs, haven't you???
Ingredients
- ¾ pound grass fed flank steak
- Freshly ground black pepper, to taste
- Garlic powder, to taste
- 1 tablespoon extra virgin olive oil
- 1 bunch collard greens, stems removed and chopped, leaves shredded
- 1 shallot
- 2 cups blueberries
Instructions
- Pat steak dry with paper towel
- Season with pepper and garlic powder
- Heat oil in skillet over medium
- Sear steak on both sides until almost cooked to your preferred level of doneness
- Remove from skillet and tent with foil
- Add chopped stems and shallot to skillet and saute until softened, three- five minutes
- Add shredded leaves, turn off heat and cover skillet; let sit two minutes
- Divide greens in half and place half on each of two plates
- Add half the steak and berries
- Finish with more pepper, if desired
