Whole Roasted Cauliflower

The simplicity of some oil and a bit of roasting can transform any veggie from mundane to magnificent!
Ingredients
  • 1 whole head organic cauliflower
  • ½ cup rendered duck fat
  • ½ small lemon, juiced, plus ½ teaspoon zest
  • ¼ teaspoon black pepper
  • 1 cup minced parsley
Instructions
  1. Preheat oven to 450°F
  2. Remove leaves and core cauliflower, leaving head intact, then discard core and put cauliflower head in pan.
  3. Rub fat all over top of cauliflower
  4. Bake until tender in cast iron skillet roughly an hour;checking occasionally to ensure even cooking
  5. Whisk together lemon juice and pepper
  6. Remove from oven and place on serving dish
  7. Scatter parsley on top
