Can’t Find Fresh Coconut?
Many, many blog readers and twitter followers are beyond bummed when they learn that canned coconut milk is a no-go as it almost always contains guar gum, which is a bean derivative and potent source of saponins.
I'm spoiled here in Los Angeles with a teeny little shop that actually sells fresh coconut cream and coconut milk, in a glass jar, much like the way I imagine it would have been back in the day when having dairy milk delivered to the home was the norm!
While there is an easy method to make coconut cream and milk using reconstituted dried, shredded coconut, I am so happy to have a referral source for the actual thing, thanks to a reader!
