Day Before Race Day PALEO Fueling…
While many athletes here at IM Las Vegas 70.3 are no doubt picking at energy bars, sipping gatorade and planning a big pasta fest the evening before the race, Chris and I are enjoying many Paleo options we either brought with us, or easily accessed at the local Whole Foods.
Some of today's feedings include:
A green drink creation made of PLAIN, unsweetend coconut water, parsley, kale, garlic, ginger & cuccumber…
Two poached eggs with spinach…
Baked Sweet Potatoes (After checking with the Whole Foods Chef to confirm they're NOT tossed in flour or made with soy!)
Breakfast pic- on the day before race day I will intentionally eat saltier foods- which is why you see the nitrate, nitrite-free, pastured organic piece of grilled ham…along with the eggs (from above) and fresh fruit…
Shown in no particular order…as I strongly feel FOOD IS FOOD, regardless of what time of day it is!
Dinner will be roast chicken, salad, yams and some berries…as always…
Small amounts of starchier food eaten at even intervals during the day today always does the trick. No need to stuff one's face and try to get it all in at the last minute…ever!
Cheers to the good old yam! (or sweet potato, depending on what part of the world you're in!).
