Based on a UK Favorite, this holiday appetizer made with almond paleo 'pastry' provides all the goodness, without the gluten!
Ingredients
- 2 cups organic, freshly ground almond meal
- 3 free range eggs
- 3 tablespoons unrefined coconut oil
- ¼ teaspoon baking soda
- 1 pound raw ground pastured pork
- onion powder, to taste
- garlic powder, to taste
- freshly ground black pepper
Instructions
- Preheat oven to 350F
- Combine almond meal, two of the eggs, the coconut oil and the baking soda in bowl and mix with hands
- Roll out into ¼" thickness; set aside
- Combine pork and spices
- Beat remaining egg in small bowl with fork
- Add half the beaten egg to pork
- Cut dough into two rectangles
- Place half the meat on each then roll up
- Seal the dough with remainder of beaten egg using pastry brush
- Place on wire rack and bake for 35- 40' checking to make sure internal temp = 160.
- Serve warm or cooled
