A paleo friendly version of a holiday classic. Using coconut in place of dairy milk and skipping the boozy brandy, it’s perfect for the whole family. (Because the recipe uses raw eggs, be sure to source them from a place you trust!)
Ingredients
  • 4 egg yolks
  • 1/3 cup honey
  • 3 cups fresh coconut milk (do not use canned; often contains a potent anti nutrient- guar gum)
  • 1 teaspoon freshly grated nutmeg
  • 4 egg whites
Instructions
  1. Beat egg yolks until they lighten in color
  2. Add honey and beat until dissolved
  3. Add coconut milk stir to combine
  4. Place egg whites in the bowl of a stand mixer and beat until soft peaks form
  5. Whisk the egg whites into the mixture
  6. Chill and serve, sprinkling nutmeg on top
